You can use any sugar or sweetener you like in the recipe, including white sugar, brown sugar, coconut sugar or low carb, keto friendly alternatives. It all depends on what you have available and your personal dietary requirements.
How To Make Candied Almonds
To make the easy cinnamon almonds, it’s simply a matter of getting out a medium mixing bowl and briefly whisking the egg white until frothy.
Then whisk through the stevia, vanilla, cinnamon and salt until fully combined.
Stir through the whole almonds until fully coated in the cinnamon sugar mixture.
Pop it all onto a greased baking tray and cook for 15 minutes at a time, tossing around and making sure the almonds are in a single layer and all the cinnamon goodness is evenly distributed.
If you’re wondering what to do with your leftover egg yolk, I usually add it to scrambled eggs or an omelette mixture – so there’s no wastage.

Cinnamon Roasted Almonds Recipe
1 Egg White
2 Tablespoons Stevia
1 teaspoon Vanilla Extract
1/2 to 1 teaspoon Ground Cinnamon
Pinch of Sea Salt
200g/7 ounces Raw Almonds
Preheat the oven to 120C/250F and get out a baking tray, cookie sheet or baking sheet, lined with well greased baking parchment paper.
Whisk the egg white until frothy.
Add the stevia and vanilla and then whisk until smooth.
Next, whisk through the cinnamon and salt.
Finally, stir through the almonds, ensuring they are all fully coated in the eggy cinnamon mixture.
Move the almonds to the prepared baking tray and ensure they are in a single layer.
Place into the preheated oven for 15 minutes, removing from the oven, tossing the almonds around and placing back in the oven for a further 15 minutes.
Cook for 15 minutes at a time, until they are cooked to your liking. Mine took 45 minutes in total.
Remove from the oven, allow to cool to room temperature to further crisp up, store in an airtight container and enjoy.

How many almonds can I eat on keto? The number of almonds you can enjoy in a day depends on your personal macros and other food choices for the day. However, most people can safely enjoy 1 ounce of almonds — about 23 nuts — as a snack, for 2.6 grams net carbs [*].
They're also rich in essential nutrients, including copper, zinc, magnesium, and iron. Though you can't overindulge in any of these options, it's perfectly fine to eat nuts on a keto diet in moderation.
A serving (around 30g / 20 almonds) of whole almonds contains approximately 166 calories, 15g fat (of which 9.5g is monounsaturated and only 1.1g is saturated), 6.4g protein and 3.75g dietary fibre. With just 1.59g carbs, they're a great snack option for low-carb or ketogenic diets.
